Anna:  Where did you grow up?

David:  Rogue Valley

Anna:  Did you eat your veggies when you were a kid?

David:  Always

Anna:  When did you know you wanted to be a chef?

David:  When I was 17 I worked at the McCully House and found love for food.

Anna:  What is your favorite food memory?

David:  When I first had abalone that I harvested.

Anna:  Where were you first trained and how difficult was your training?

David:  Portland, Oregon – Le Cordon Bleu

Anna:  How do you get your inspiration?

David:  Books, TV shows, being creative

Anna:  Favorite kitchen equipment or gadget?

David:  Chef knife, blender, beuerre mixer, meat grinder

Anna:  Best piece of advice you would give to a home enthusiast?

David:  Always taste your food and season!

Anna:  Best cooking for a novice just getting into the business?

David:  Go back to school. Skills, skills…

Anna:  Funniest kitchen incident?

David:  There is some funny incident that takes place in Larks kitchen on regular basis.

Anna:  Favorite food to cook with?

David:  Fresh seafood, and any local , fresh ingredients.

Anna:  What do you think is the most challenging ingredient to work with?

David:  Don’t have one.

Anna:  Do you have a favorite wine?

David:  Syrah

Anna:  What do you like to eat when you’re at home?

David:  Seafood, deer & elk. (I hunt.)

Anna:  Are there any foods you just don’t like?

David:  No.

Anna:  Favorite cookbooks?

David:  French laundry cookbook.

Anna:  Where do you see yourself in ten years?

David:  Good Question!??

Anna:  What is going to be the next big thing in the food world?

David:  Offering customers to fish their own meal that a chef is going to prepare later. Example: Steelhead fishing & dinner on the Rogue River with the Rogue Runner Guide Services and a personal chef.

Anna:  What do you do for fun?

David:  Scuba dive, go spear fishing, bow hunting, salmon & steelhead fishing, play with my labs.

Anna:  Where is your favorite place in the world?

David:  Cinque Terre, Italy

Anna:  What do you most love about your job?

David:  My freedom to be creative.

Anna:  If you had just one wish, what would it be?

David:  I would wish to never work again, just enjoy life!
